Banana Cream Pie

Banana slices layered in bottom of pie crust, and topped with mixture of eggs , sugar, vanilla, cornstarch, and butter. Repeat layer of bananas, chill and top with whip cream.
Ingredients -
1/3 cup plus 1/4 cup Sugar
3 tablespoons Cornstarch
1/4 teaspoon Salt
1 1/2 cups Milk
2 Egg Yolks, lightly beaten
2 tablespoons Butter
2 teaspoons Vanilla Extract
2 Egg Whites
2 Bananas, sliced
1 (9-inch) Prebaked Pie Shell
 
Preparation:

1. Combine 1/3-cup sugar with cornstarch and salt in saucepan.

2. Stir in milk and lightly beaten egg yolks.

3. Cook over low heat until mixture thickens.

4. Remove from stovetop and stir in butter and vanilla extract.

5. Cool to room temperature.

6. Beat egg whites until soft peaks form.

7. Continue beating and gradually add 1/4-cup sugar

8. Beat until stiff peaks form.

9. Fold egg white mixture into egg yolk mixture.

10. Arrange layer of banana slice in bottom of pie shell, spread cream filling over bananas.

11. Repeat layering.

12. Cover and chill.

13. Top with whipped cream, if desired.
