Brownie Ice Cream Pie

Chewy brownie mix and chocolate chips combined with eggs, vegetable oil and water. Mixture is poured into pie shell and baked until set. Once cooled pie is topped with strawberries and vanilla ice cream.
Ingredients -
1 box Chewy Fudge Brownie Mix
2 Eggs
1/2 cup Vegetable Oil
1/4 cup Water
3/4 cup Chocolate Chips
1 (9-inch) Unbaked Pie Crust
1 (10 ounces) package Frozen Sweetened Strawberries
Vanilla Ice Cream
 
Preparation:

1. Preheat oven to 350 F.

2. In large bowl, stir brownie mix, vegetable oil, eggs, and water until well blended.

3. Fold in chocolate chips.

4. Spoon into unbaked pie crust.

5. Bake 40-45 minutes or until set.

6. Cool completely.

7. Add frozen, sweetened strawberries to blender. Puree until smooth.

8. Cut pie into wedges.

9. Serve with vanilla ice cream and top with strawberry puree.

Pie Crust Edges
Cover pie crust edges with foil after the first 15-20 minutes of baking to avoid the edges from getting too brown, and potentially burning. Cut a 7-inch circle in a 12-inch piece of foil and carefully fold over edges.
