Peach Custard Pie

Peach slices arranged in pie shell, and topped with egg custard mixture. Pie is baked until set.
Ingredients -
5 or 6 Whole Canned Peaches, sliced
2 Eggs
2 tablespoons Butter
1 cup Sugar
2 tablespoons Flour
1 (9-inch) Unbaked Pie Shell
 
Preparation:

1. Preheat oven to 425 F.

2. Drain sliced peaches. Arrange peaches in bottom of pie shell.

3. Mix eggs, butter, sugar, and flour.

4. Pour over peaches in shell.

5. Bake 15 minutes.

6. Reduce heat to 325 F.

7. Bake 45 minutes.

 



Cooking Tip
Fresh Peaches
If available, fresh peaches make a great substitution for the canned peaches. Slice fresh peaches and place in colander to drain.

Rolling Pastry Dough
When rolling dough, start in the center and roll out. Lift dough to additional flour to rolling surface. Avoid excess flour and excess rolling.
